Sometimes the best experiments are accidental. Volcanic soils, sustainable farming, a beautiful vintage and a great crush crew get upended. We loaded the press with pinot gris and drained most of the juice to tank. The press was left to do its last two hours of squeezing and rotating. We focused on evening punch downs.
That’s when the press blew up, the bladder reduced to ribbons.
It continued to rotate and cycle, thrashing the clusters, skins and stems into something of a mess. Climbing into the press, the remains were hand shoveled into our small pinot press (thanks, Drew!). Enough juice was recovered for 90 cases of perfumed, complex barrel fermented wine with tannin and texture unusual for pinot gris.
